Carola is Spanish chef and food systems enthusiast with a background in environmental sciences. She is part of Titsout4snacks, an all-female led food collective that has been organizing food experiences in Amsterdam since 2021. She organized workshops last year concentrating on Spices and Colonialism; this year she is coming alone, but hoping to share with you all what she has been cooking, learning and eating in the past year.
In the first workshop of this series, Carola will teach you how to ferment some fun drinks and some of the science behind it! Think kvass, natural sodas or simple fermentation of vegetables. You will be able to play around with different salting techniques, yeasts and sugary solutions that you will be able to take home.
Students need to bring their own jars + one resealable bottle (can be plastic) and one vegetable of their choosing.
Do you still use chickpeas from a can or jar? Are you interested in expanding your protein sources without experiencing crazy bloating? In this workshop, Carola will teach you how to cook legumes such as chickpeas, lentils and other dried seeds in the Legume family from scratch.
Have you always wanted to learn to make bread but the trendy sourdoughs look too complex for you? In this workshop Carola will be teaching you how to make different types of flatbreads that take less time than conventional breadmaking and are dummy-proof.
Students should bring anything they’d like to dip their bread into.
In this workshop Carola will teach participants how to cook a dish she has been eating from childhood: Paella. You will get to see the entire process from beginning to end, and try your hand at making your own, as well as some side dishes.
Students should each bring a vegetable they like (potatoes don’t count).
